| Preparation |
| Cippoline are a small, sweet onion just larger than pearl onions. If you are unable to find them this works with pearl onions left whole. In a large skillet melt butter, add cippoline, 1 tablespoon sugar, bay leaf, salt and pepper. Sauté until onions are lightly brown and sugar is starting to caramelize (8 or 9 minutes). Remove pan from heat, add vinegar, remaining sugar, and stir scraping pan bottom. Place back on medium high heat, add water and simmer until liquid reduces by half. Serve warm or room temperature. Serves 4-6 as a condiment. |
